Chef-Ownership and Management

Chef Rob Evans and partner Nancy Pugh |
Hugo's Restaurant has long been a Portland Landmark,
in business for over 12 years, but now the only thing that is the same is the name.
Owners, Chef Rob Evans and partner Nancy Pugh, have returned to Portland in October of 2000,
to bring refined dining . . . a simple, yet classic, casual elegance . . . to once again
tempt our palates. An intimate decor, delicious food and excellent service
are all well in place! Evans comes to Portland from two of the country's most highly
regarded restaurants: the Inn at Little Washington (Washington, VA) and the
French Laundry (Napa Valley, CA) bringing his skills and imagination with him. |
"
Hugo’s passion lies in its love for creative food, good wine and wholesome Maine ingredients. Our vision is to fuse these together, to bring you regional cuisine that is both unexpected yet ultimately familiar.
|
We believe many flavors are essential for a great dining experience. Our menu enables you to enjoy four courses and still have room to indulge in dessert. Feel free to explore what Maine's coast, Hugo's kitchen and our dedicated staff can bring to your table. |
 |
Chef’s Tasting Menus are the ultimate Hugo's dining experience. These signature multi-course menus are always different, exciting and well worth the wait. (Available with advance reservation only.)
Our bar menu: for those seeking an abridged version of what Hugo's has to offer. This cozy setting is perfect for enjoying a glass of wine, specialty drink or one of our many hand-crafted mini courses that will leave you wanting more.
Many thanks from all of us. It’s your enthusiasm for Hugo's and good food that keeps it exciting and allows us to grow."
